Pinot Noir Duband Cotes de Nuits


Many people have food allergies and our friend Carlo is one of them. Flour being the strongest and most difficult of his many, eating out can turn into a chore. But he's not the only one, many people are now discovering that they too have allergies to foods, or just can't digest certain things; and because of this new restaurants are springing up, stating that they make all natural foods.
One of these restaurants is in Treviso and is called 'La Vera Terra' and is really quite good. Pastas are made with 'alternative' cereals like corn, barley and soy, and they use cous cous and whole grain rices. All the bread is home made and served with biological olive oil and a sweetened mixed grain topping. The house brings out an appetizer of freshly made hummus and then its onto the menu. La Vera Terra does not serve meat, but does have a wide range of fish dishes. I started out with a flan-like spinach tort with a fondued fontina cheese poured over it. My entree was stuffed calamari with roasted potatoes. Other dinners on our table were Paella, pasta with a moscardini sauce (this was my favorite) and asparagus salad. Throughout the dinner we enjoyed a really nice and flavorful, but not overpowering since we were eating fish, pinot noir from france. (Duband Cotes de Nuits, 2005 Burgandy) Velvety, silky and well balanced, it actually paired nicely with with the food which did have a bit of spice to it. Complex and intense, full but not overbearing, full of cherry, nutty and woodsy notes it was well- french, and its hard for them to do wrong. With a long list of homemade deserts, I opted for a fruit salad since I couldn't fit anything else in my stomach- and it was probably one of the best I've ever had... Not sure if it was the fresh fruit or whiskey that really made this dish, but it was amazing. If your in Treviso ever... check this place out.

Molte persone hanno delle allergie e il nostro amico Carlo è uno di queste; la farina è una delle peggiori e un'uscita per un pranzo o per una cena può davvero preoccupare chi ha purtroppo questo problema. Chiaramente il nostro amico non è l'unico a soffrire di queste patologie quindi
delle ricerche che hanno portato l'uomo ad ingegnarsi e ora esistono dei ristoranti che fano al caso nostro.
Uno di questi è a Treviso e si chiama La Vera Terra ed è veramente ottimo. Quì la pasta è fatta con ingredienti "alternativi" come il farro, la soia, l'orzo ed usano cous cous e riso integrale.
Il pane è fatto in casa ed è servito con olio extra vergine di oliva biologico e con dei semi di girasole e miglio.
Offerto dalla casa c'era del humus fresco fatto di piselli e ceci, molto interessante. La Vera Terra non serve carne ma ha un'ampia varietà di scelte di pesce.
Ho iniziato con un flan di spinaci con top di formaggio sciolto di Fontina, per passare poi a dei calamari ripieni e patate arroste. Altre scelte in tavola erano insalata di asparaghi, la "paella" eslusivamente di pesce e un piatto di pasta con moscardini (il mio preferito).
Abbiamo abbinato a queste gustose delizie un grande Pinot Nero della Borgogna Duband vendemmia 2005 della Cotes de Nuits. Vellutato, setoso e ben bilanciato si incontrava bene con il cibo che era leggermente speziato. Intenso e complesso ma mai supponente e carico, nel bouquet c'erano ciliega sotto spirito, note di mandorla e di vaniglia .In bocca la sua intensità e persistenza erano straordinarie, ragazzi made in France.
Da una lunga lista di dessert, io ho optato per un splendida macedona di frutta, probabilmente la migliore che abbia mai mangiato, in quanto non c'era più spazio nel mio stomaco.
Se sei a Treviso non farti perdere l'occasione e visita questo posto.

Moscato D'Asti e Verduzzo



After our dinner at Ca' Nostra, there with friends for a birthday party, we moved on desert and our choice of desert wines. Moscato d'Asti or Verduzzo passito? I had both! Moscato is one of the four aromatic grapes- Moscato, Malvasia, Gewurstraminer and Brachetto. Their aromaticy makes them all slightly sweet, and therefor, for the most part they are used for desert wines. Moscato d'Asti DOCG from Piedmonte is one of the most loved desert wines in Italy mainly because its not over bareing nor is it syrupy like typical sweet wines. Many are lightly sparkling and last nights was no exception. Straw colored, aromatic, young and refreshing with perfumes that continue when drunk of carmalized apricots, peaches and delicate flowers. Light in alcohol and in body its a perfect wine with most fruit infused deserts. Verduzzo passito from Bosco Del Merlo on the other hand is completly different in that it becomes sweet by leaving the grapes to dry out in the sun after they are picked. The grape Verduzzo is also the main grape in the velvety Ramandolo DOCG. Intense and persistant in its smells and tastes, Verduzzo when passito is golden colored, lightly syrupy wine. Cooked apples, mature peaches and figs and dried glicine and acacia flowers, it pairs well with dry pastries and marmalades.

Dopo una ottima cena a Ca' Nostra a Marcon, con amici per una festa di compleanno, arrivando al dolce e alla scelta del vino.
Moscato D'Asti o Verduzzo passito?? Io ho bevuto entrambi.
Il moscato fa parte delle quattro uve aromatiche assieme alla Malvasia, Gewueztraminer e Bracchetto. L'aromaticità delle uve fa si che tutti questi siano ottimi come vini da dessert. Il Moscato D'Asti DOCG dal Piemonte è uno dei più amati in Italia e all'estero grazie al suo esser bilanciato, dolce si, ma mai nello stucchevole. Molti vini Moscato D'asti hanno una leggera effervescenza e quello che abbiamo bevuto non era da meno. Dal colore giallo paglierino, aromatico, giovane e fresco, con profumi che ti seguono anche durante la beva di albicocca in caramello alla pesca e ai fiori delicati. Leggero il suo tocco sia nell'alcol che nel corpo. Insomma un vino perfetto da accompagnare a tutte le crostate di frutta del mondo. Il Verduzzo in questo caso dell'Azienda Bosco del Merlo invece acquista il suo grado zuccherino durante una ulteriore maturazione su graticci se possibile sotto il sole in modo da "asciugare", se così si può dire l'uva di un po' della sua acqua nell'acino in modo da concentrare gli aromi prima della pressatura. Intenso e persistente sia nell'olfattivo che nel gustativo. Il Verduzzo quando è in versione passito si presenta in un bel color dorato, nel bouquet si la mela e la pesca sciroppata, fichi secchi e a seguire poi fiori secchi di glicine e d'acacia. Si abbina facilmente con dei dolci secchi e piccole crostatine di marmellate.

Sauvignon Blanc- Chile


To defer a bit from our regular Italian wine tasting, we bought a bottle from Chile. A new trend in the world of wine, Chilean wines a known for their great taste at a low price. The high altitudes of the Andes take-in large amounts of sun and produce rain water run-off great for irrigation. The mountains also protect the vines from pests like phylloxera, which destroyed almost all of the European grapes in the mid nineteenth century. Pretty much the conditions here are ideal for grape growing.
The particular bottle we tasted, was a Sauvignon Blanc from the Maipo Valley. The area is known mainly for its Cabernet Sauvignons, the star grape of Chile, and is the lowest region and closest the ocean, creating breezes important for vines. Although the Sauvignon Blanc from here is a quieter grape and not as intense or refreshing as those from New Zealand, the bottle from TaraPaca wasn't half bad.
Light colored and refreshing in its acidity it carried a strong sapidity, maybe too much so, which caused it to be hard to pair food with. It did have nice bouquet of pineapple, peach, apricot, lava rock, and wild flowers. The alcohol and glycerine were at good levels and the overall intensity and persistence were quite nice. A good summertime appertif.

Per differenziarci questa volta dal nostro itinerario di vini italiani, abbiam comperato una bottiglia dal Cile. E' un nuovo trend nel mondo acquistare vini che sono prodotti in questa paese grazie alla buona qualità ad un prezzo piccolo. L'alta altitudine del massiccio delle Ande crea una grande esposizione al sole e ad ai terreni dispone delle innumerevoli precipitazioni frequenti per tutto l'anno, quindi irrigazione. La catena montuosa inoltre ha protetto e protegge tuttora dalla filossera che ha distrutto la maggior parte delle vigne in Europa alla metà del diciannovesimo secolo. Le condizioni pedoclimatiche sone quindi ottime per la vigna.
Passando alla bottiglia assaggiata era un Sauvignon Blanc della regione del Maipo Valley. Quest'area è conosciuta per il Cabernet Sauvignon, vitigno principe in Cile, è la più bassa di altitudine e più vicina all'oceano usufruendo quindi di importanti brezze provenienti dal Pacifico. Sebbene il Sauvignon prodotto in questa regione non presentasse grande intensità e freschezza paragonato ai più importanti a livello mondiale come per esempio quello della Nuova Zelanda, la bottiglia di Tara Paca non era proprio male.
Un bel giallo paglierino ancora vivace presentava una buona freschezza e buona sapidità, forse un po' troppo marcata, difficile da abbinare con il cibo. I profumi erano quelli dell'ananas, dell'albicocca, della pesca, minerale di lava e di fiori selvatici. L'alcol era presente come anche la glicerina; l'intensita in bocca era abbastanza presente come pure la persistenza.
Un'ottimo vino da aprire nella prossima calda estate.

Ripassa Zenato Valpolicella Doc Superiore and Centrale


Once again we hit up our favorite restaurant- this time with fellow New Yorkers, and Bloggers- Terrence and Ken (Mondosapore) Enjoying a refreshing 'spritz,' or a cocktail made from Aperol, prosecco and seltzer- a local treat, we decided on what to eat. Ordering of course our favorite tartar, the boys decided that raw meat wasnt for them and went with two other delightful appetizers; a mini tort with zucchini and bacon for one and a frittata with white asparagus and egg for the other. With these, we drank as we did last time, the Magara.
For the second course we opened another fantastic bottle, this time from a region closer to us- Ripassa Valpolicella Doc Superiore della'Azienda Vitivinicola Zenato. What makes this wine so special, is that the must 'repasses' a fermentation- therefor it has two fermentations. Pretty much an Amarone is made from dried grapes, like any other wine. With the leftover must, regular Valpolicella wine is added and then referments. What comes out of this process is a heavier, higher in alcohol, fruitier, more tannic wine, pretty much a stronger version on the non- ripassa, very similar to the Amarone. It has an deep red color with streaks of granate, and has wonderfully intense, clearly distinguishable aromas of dark fruits, violas, cinnamon, balsamic, leather, chocolate and wood, obviously because it aged in oak. A well- rounded, rich, fruity and velvety rush when drunk, its persistance carries out all the smells sniffed before. And what goes better with a structured, tannic wine? Well, a steak of course! Two different kinds of Florentinas we ordered- one from Poland which was a younger cow, which was soft, sweet and tender; and the other from Austria, and adult animal which when cooked was more similar to most filets that we have, meatier, tougher but still like butter!

Ieri sera io e mia moglie siamo tornati alla Trattoria Alla Centrale a Scorzè, ma questa volta ci abbiamo portato anche due nuovi amici da New York City Terence e Ken. Conosciuti attraverso Giampiero Nadali di Aristide siamo entrati subito in sintonia, infatti anche loro sono deliziati da Bacco il dio del vino scrivono sul loro blog Mondosapore sulle loro esperienze girando in lungo e in largo l'Italia.
Abbiamo aperto due bottiglie di cui una n abbiamo gia parlato nel post....., l'altra invece più interesante e preziosa, anche a livello di spesa, era il Ripassa Valpolicella Doc Superiore della'Azienda Vitivinicola Zenato.La caratteristica del ripasso e di rifermentare il Valpolicella della vendemmia di ottobre nelle bucce dapprima usate dal fratello maggiore col nome illustre Amarone. Un vino dal colore rubino intenso con leggeri riflessi granati, con una buona consistenza e intensità nei profumi che spaziano dal floreale, alla confettura di more e prugne per arrivare alla cannella con inizi di etereo; in bocca introduce la sua potenza gustativa in un modo intenso e vellutato con un persistenza ammirevole.
L'abbiamo abbinato a delle carni importanti come la rinomata "fiorentina" e ad una specialità dl posto carne prussiana.
Il tutto delizioso

Cannonau Nepente


One of the great things about Italy is that each region is completly different than the next. Each has its own history, culture, foods and wines. Tuesday we were able to try a dinner from a place I've never been to, and have always wanted to, nor have had the fortune to experience their food. This Sardinian restaurant called Trattoria a Torre Antica, not far from our house was a real delight. Our starters included cheese like pecorino and ricotta either fresh and spreadable or in oil; vegeatables like sundried tomatoes, olives and articokes all in oil; and fresh salami's like colatello, salami from donkey (a specialty of theirs) and a dip with a tomato base which was slightly spices and aromatic. I was full already. With our appetizers we opened a bottle of Monico- an indigenous grape to Sardegna. One of the 19 Doc's of the island, Monica di Sardegna (not to be confused with Monica di Cagliari) is a red grape with a medium structure and a light acidity. Its slight viney- or almost seems freshly picked and coats the mouth softly and leaves a fruity aftertase. Normally these grapes don't see much time in botte, but are inclinded to be drank with local dishes- perfect!
The second course brought a plate of 'cingiale' or wild boar- make two ways- the first baked, then sliced thin and covered with a peppercorn gravy. The other was cut into chunks and cooked in a tomato based sauce. Both exquisite. With this we ordered THE Sardegnian wine- Cannonau. A quick tip for those of you who don't know much about these wines- besides their delicious taste and good prices they also have the most antioxidents of any wine- a reason why most people of the region live way beyond their years. As fr the Cannonau we opened, it came from the Cantina Sociale Oliena and was called Cannonau Nepente. In other places of the world, Cannonau has the same DNA as Grenache in France, Garnacha in Spain and Tocai Rosso in Veneto. They are good structured and not heavy since they also don't spend much time in barrique. Better to be drank within the first four years, this vivacious red with streaks of purple, has intense perfumes, and delicate accents of prunes and other red or violet fruits.

Ieri sera tra amici siamo andati in trattoria con cucina sarda, la buona compagnia e l'ottima cucina ci ha fatto passare momenti molto belli. Ma andiamo con ordine la Trattoria si chiama Torre Antica (tel 041.630415 )che oltre ad essere una buona pizzeria serve piatti della cucina sarda abbinati ai vini di quella meravigliosa isola. "I ne gha portà" tipica espressione del dialetto veneziano che sta per "ci hanno servito" del culatello e del salamino d'asino; salsa di pinoli pistacchi pomodorini peperoncino ed olio d'oliva da spalmare su crostini di pane; formaggi : pecorino sott'olio, ricotta, pecorino cremoso, pecorino sardo stagionato; piatto di pomodorini secchi, carciofini e olive e un ulterire piatto di prosciutto crudo con lardo di colonnata. Questo era solamente l'antipasto a cui abbiamo abbinato l'autoctono Doc Monica di Sardegna un vino di media struttura e discreta acidità. A seguire ,qualcuno ha preferito passare ad un primo piatto di pappardelle ai porcini e piselli, invece i più della banda ha scelto un bis: cinghila e al forno e spezzatino di cinghiale entrambi ottimi. Chiaramente aumentando la struttura del piatto abbiamo optato per l'altro famoso autoctono della regione, Mr Cannonau. La cantina del ristorante proponeva il Cannonau Nepente della Cantina Sociale Oliena, un ottimo prodotto qualità prezzo.
In altri posti del mondo questo vitigno è chiamato Grenache in Francia, Garnacha in Spagna e Tocai Rosso nel Veneto.Sono vini che sono strutturati e sicuramente ben digeribili se non hanno permanenze in botte.Ottimi se bevuti nei primi 4 anni di vita, lavivacità del rosso che sfumature porpora, ha intensità nei profumi con delicati accenti di prugna e altri piccoli frutti rossi.
